Eggplant Pasta

Today, I tried cooking again and I want to share it with you. šŸ™‚ Are you looking for a delicious and healthy recipe that is soooo easy to prepare? Try Eggplant Pasta! We all know that pasta is one of the easiest dishes to cook, if not the easiest. For instance, I’m no cook. But most of my church mates who tasted this experiment of mine, liked it. Try it and I hope you like it, too!

RECIPE
good for 10-12 people

Ingredients:

ā€¢ 1 kilo pasta
ā€¢ 8 pcs. medium-sized eggplants, diced
ā€¢ 1 dozen tomatoes, diced
ā€¢ 4 cans (flat and round) Century Tuna
ā€¢ Olive oil
ā€¢ 1 garlic clove, finely chopped
ā€¢ Salt and pepper
ā€¢ Basil
ā€¢ Cheese

Procedure:
ā€¢ Step 1 : Fry eggplant dices (while cooking the pasta, hehe)
ā€¢ Step 2 : Sautee garlic in olive oil, add tomatoes and simmer for a few minutes, add tuna, then eggplant, then salt and pepper
ā€¢ Step: 3 : Add basil
ā€¢ Step 4: Mix with the pasta and serve with cheese šŸ˜›
